Just experimenting here. Turned out not too bad. Perhaps I added a bit too much lemon juice, but overall, it’s quite brilliant.
First, I’ve got a salmon head marinated in hua diao wine, soy sauce, garlic and butter.
Here’s the garlic and butter side. I placed this side facing up on an aluminium foil lined baking tray and into the oven it went.
This is what it looks like after 6 minutes at 240 deg C.
I turned over to the skin side of the fish head and placed my onion rings. Grilled at 200 deg C for 10 minutes.
I squeezed some lemon juice over this and it’s ready to serve. The onion rings were very flavourful, having absorbed the fish juices, butter and garlic. There wasn’t much meat in the fish head, but what precious little it had tasted superb – just a bit too sour because I’ve squeezed too much lemon juice. This grilled fish head actually works even without the lemon juice. Maybe I should leave it out the next time I make it.
