This is the first time I’m doing this dish and I discovered a new favourite. There are only a couple of ways to produce really flavourful juices from your ingredients. One way is by double boiling and the other is by baking. Steaming also produces some juices, but invariably there’s condensation and the juices get diluted.
I’ve done cod many times and this has to be one of the best. You’ll be amazed how easy it is.

First, you fry some onion with carrots, celery and button mushrooms in olive oil. Don’t bother to cook it well.

Next, marinate your cod steak with hua diao wine and soy sauce. Place it on a piece of aluminium foil. Place your briefly fried vegetables on the foil together with the fish. Wrap up and start baking for about 20 minutes.

The result is a fantastically flavourful fish with really tasty juices that go well on white rice. The taste of the mushrooms go perfectly with the celery. The carrots and onions are so sweet. The kids will love it.
