You may encounter this dish at a Western restaurant, but it actually requires no skill to prepare.

Season salmon with salt and black pepper. Let it sit for an hour in the refrigerator.

Mango slices in the blender. I’ve got no cream with me, so I added a little evaporated milk. Blend everything till you get a nice and smooth sauce.

Fry the salmon on both sides until you get a nice and firm crust. Place in on a plate.

Well, one thing’s for sure, the restaurant is not going to be so generous with the mango sauce. It may look a little too much here, but the kids finished the last drop.
Do try this at home. You’ll certainly enjoy cooking it even if you don’t enjoy eating it. At any rate, cooking skills are very important when Singapore’s population hits 6.9 million and long queues form for lousy and expensive food.
