What do you do if you like Hokkien mee but you don’t like pork? Simple. Make your own Hokkien mee sans pork. The soul of the dish is prawn or shrimp stock. After some experimentation, I found that I could make a very decent prawn/shrimp stock by first frying some dried shrimp (hay bee) in oil and then boiling the fried dried shrimp in water.

Most places that sell Hokkien mee use a mixture of yellow noodles and coarse beehoon. Some places use fine beehoon and I prefer the latter. Embedded below is a video of how I did it.
Do try this at home. Your kids will love it. Hokkien mee can go without the pork and lard, but it can’t go without lime juice and sambal chilli. Bon appetit.
